SAUSAGE & PEPPERS PASTA SAUCE 
This sauce is awesome the next day!

4 mild (sweet) Italian sausage links
4 hot Italian sausage links
1 tbsp. butter
1 large green pepper, diced and de-seeded
1 medium onion, diced
1 (8 oz.) pkg. sliced fresh mushrooms
2 (28 oz. ea.) cans tomato sauce (Hunts)
1 (15 oz.) can stewed or diced tomatoes
Italian seasoning, to taste (McCormick)

In a large frying pan over medium heat, brown sausage links on all sides. Remove links to a paper towel to cool.

Lower heat to medium-low and in the same pan, add butter, green pepper and onion. Sauté about 5 minutes. Add sliced mushrooms and continue to sauté 2 to 3 more minutes. Remove from heat.

Slice cooled sausage links into rounds (you'll get about 6 to 8 slices per link).

In a Dutch oven over medium-low heat add all cans of tomato products. Warm then season to taste. Add cut sausage links and pepper/onion/mushroom mixture.

Cover and simmer for 2 to 3 hours. Serve over your favorite pasta.

Serves 4 to 6.
