FUNNEL CAKES 
3 eggs
2 c. milk
3 c. flour
1 c. cornmeal
1/4 c. sugar
1/2 tsp. salt
2 tsp. baking powder
1/8 tsp. salt

Beat eggs and milk together. Add dry ingredients and mix well until thin enough to run through a funnel. Add more milk if needed. Fry in deep fat at 375 degrees in a large iron skillet. When first side is lightly browned, turn and fry other side. Sprinkle with confectioners sugar. Makes approximately 12-15 funnel cakes.
