RICE KRISPIE DATE COOKIES 
1 c. butter
1 c. sugar
1 1/2 c. chopped dates
1 egg
1 tsp. vanilla
3 c. Rice Krispies
1 1/2 c. pecans
Coconut

Melt butter, add sugar and stir until dissolved. Add dates, cook until dates, sugar and butter are well mixed. Add beaten egg, cook about 5 minutes; add vanilla. Pour over Rice Krispies and add pecans. Cool, roll into balls, roll balls in coconut. Add 1 cup white syrup if raisins are used.

A good tasting ball. I used coconut sugar and do not recommend because it does not melt well. Also, grind up your pecans or chop them fine. These will NOT hold together when they are warm and will NOT tolerate being pressed into bars to cut later. Balls are the way to go on these. I rolled half in coconut and the other half in powdered sugar. All in all great tasting (from the butter) and a nice treat. These are rich and buttery.
