APPLE GINGER SCALLOP 
6-8 lg. yellow delicious apples
3/4 c. dark brown sugar
1 c. crushed ginger snaps
1/2 tsp. cinnamon
5 tbsp. melted butter
Juice of 1 lemon
Vanilla ice cream

Sprinkle the apples with lemon juice (this will prevent apples from turning brown as well as adding flavor). In a small mixing bowl blend brown sugar, cinnamon and crushed ginger snaps. Stir in melted butter with a fork.

Place alternate layers of apples and crumbs in a casserole dish. Come out with crumbs on top. Bake at 375 degrees for 1/2 hour with cover and 1/2 hour without. Put this in the oven as you sit down to eat your main meal and it will be ready for dessert. Serve very hot with vanilla ice cream on top.
