GREEN CHILIES CASSEROLE 
1 c. chopped onions
2 tbsp. butter
1 (4 oz.) can sliced mushrooms, drained
1 (10 oz.) can condensed cream of mushroom soup
1/2 c. milk
1 (4 oz.) can chopped green chilies
1 tsp. salt
1/4 tsp. pepper
3 c. cooked rice
1 1/2 c. grated Cheddar cheese

Saute onions in butter until transparent. Add remaining ingredients reserving 1 cup cheese. Turn into greased shallow 2 quart casserole dish. Top with remaining cheese. Bake at 350 degrees for 20-30 minutes.
