DATE APPLE COOKIES 
1 c. dates
1/2 c. water
1 c. shredded apple
3/4 c. oil
1/2 c. chopped walnuts
1/2 tsp. salt
1 tsp. vanilla
1/4 c. chopped dates
3 c. rolled oats

Combine dates and water in saucepan. Heat, mash and stir until smooth. Add shredded apple and oil; beat until smooth and oil is emulsified. Add other ingredients. Mix well. Let stand 10 minutes to absorb moisture. Beat briskly. Drop from a teaspoon on ungreased cookie sheet. Bake at 350 degrees for 15 minutes or until browned. Makes 36 cookies.
