LOW-CALORIE MEAT LOAF 
1 lb. lean ground beef
1/2 c. oat bran
1 egg white
2 tsp. lemon juice
1/4 c. ketchup
2 tbsp. chopped parsley
1/4 c. evaporated skim milk
Pepper

Preheat oven to 350 degrees. Spray a 8 1/2 x 4 1/2 inch loaf pan with Pam; set aside.

Blend all of the above ingredients in a large mixing bowl and pat them into a prepared loaf pan. Cover loaf pan with foil and bake for 45 minutes. Let meat loaf sit for 10 minutes before slicing and serving. Makes 4 servings. For 8 servings just double ingredients.
