GERMAN POTATO SALAD 
5 lbs. potatoes
1/3 c. vinegar
1 pkg. Italian seasoning dressing mix
1 lb. bacon
3-4 lg. onions, sliced thin
2/3 c. Crisco oil

Boil potatoes, cool, peel and slice. Slice onions very thin. In a large pan mix vinegar, oil and dressing mix. Add the onions and heat to boil and no more. Shut off heat and pour over sliced potatoes.

Fry bacon until crisp. Blot excess oil on paper towels. Crumble over sliced potatoes and mix well. Make the night before as the flavors improve overnight.
