SWEET POTATO PIE 
2 lg. sweet potatoes
2 egg whites or 1 egg, beaten
1 tbsp. sugar
1/4 c. raisins, optional
1/2 tsp. cinnamon
2 tbsp. soft butter
1 c. 2% milk or skim evaporated milk
1 9" pie shell

Wash potatoes carefully; cook in a covered saucepan until soft. Peel and mash in a medium size bowl. Should be 1 1/2 cups when mashed. Add other ingredients in order given. Mix well. Pour into pie shell. Bake at 450 degrees until lightly browned.
