BEETS WITH LEMON AND OLIVE OIL 
6 medium beets (2-inches of green tops left on)
3 tbsp. olive oil
5 tbsp. lemon juice
salt and pepper

Bring a large quantity of water to the boil. Add the beets and simmer for 30 to 40 minutes until done; drain. Slip off skin. Slice or quarter the beets. When ready to serve, heat olive oil (use butter if you wish) in a large pan. Add the beets and heat thoroughly. Blend in the lemon juice, salt and pepper.

Makes 4 to 5 servings.
