BEET AND APPLE RELISH 
1 1/2 lb. beets, rinsed and stems removed
1 sm. Granny Smith or greening apple, peeled, cored and cut into 1/2 inch dice
1/3 c. chopped onion
1 tbsp. sugar
2 tbsp. cider vinegar
1/2 tsp. Kosher salt (coarse)
Freshly ground black pepper

Wrap each beet loosely in plastic wrap; twist top tightly to seal. Arrange in a circle in microwave at high power for 10 minutes.

Remove from oven. When cool enough to handle, unwrap over bowl to catch juices. Slip off beet skins and discard. Cut beets into 1/2 inch dice.

Combine beets, apple, onion, sugar, vinegar, salt, and pepper in microwave safe 6 cup measure. Cover tightly with plastic wrap. Microwave at high power 4 minutes.

Let stand, uncovered, until room temperature. Refrigerate, covered, for up to a week or two. Serve with fish or pork.

Since microwave ovens vary in power, you may need to adjust your cooking time.
