OVERNIGHT MACAROONS 
2 c. quick cooking oats
1/2 c. salad oil
1/2 tsp. salt
1 c. brown sugar
1 egg, beaten
1/2 tsp. almond extract

Mix oats, brown sugar and salad oil. Let stand overnight. Next day mix all ingredients together; place by spoonful on a greased cookie sheet. Bake 15 minutes at 325 degrees. Remove from cookie sheet immediately to cool. Makes about 30 macaroons.

I use this recipe all of the time for my gluten-free friends. I find it works better to cook it in my mixing bowl stirring once or twice until thoroughly cooked. Then using a ice-cream scoop and large spoon, I scoop out and mold cookies while the batter is still hot. Place cookies on parchment paper till cool.
