ZUCCHINI MUFFINS 
2 c. zucchini or squash, peeled and shredded
3 eggs, beaten
3/4 c. cooking oil
2 1/2 c. sugar

Beat eggs, add zucchini, oil and sugar. Blend well and add:

3 c. flour
1 tsp. baking soda
3/4 tsp. salt
1 (6 oz.) can crushed pineapple, drained
1 c. raisins

Mix together. Fill muffin cups 1/2 full. Bake at 350 degrees for 30 minutes.
