ZUCCHINI BREAD OR MUFFINS 
3 c. all-purpose flour
3/4 c. sugar
1 c. walnuts, coarsely chopped
4 1/2 tsp. double acting baking powder
1/2 tsp. baking soda
1 1/2 tsp. apple pie spice
4 eggs
1 tsp. vanilla
3/4 c. Sue Bee honey
2/3 c. salad oil
2 c. grated zucchini

Preheat oven to 325 degrees. Grease two 8 1/2 x 4 1/2 inch loaf pans. In large bowl, mix flour, sugar, walnuts, baking powder, soda, apple pie spice, and salt. In medium bowl, beat eggs slightly. Stir in Sue Bee honey, salad oil, zucchini, and vanilla. Stir liquid mixture into flour mixture just until flour is moistened. Spread evenly in loaf pans. Bake 1 hour or until toothpicks come out clean. Cool in pans 10 minutes. Remove from pans. Makes 2 loaves.

OR MUFFINS: Mixing as directed, preheat oven to 375 degrees. Grease muffin tins or use paper liners. Fill muffin cups 3/4 full. Bake for 15-20 minutes or until toothpick comes out clean. Yields: 29 regular muffins.
