1 c. oil
1 1/2 c. sugar
2 eggs
1 c. chopped walnuts
3 c. flour
1 1/2 tsp. baking soda
1 tsp. salt
1 tsp. vanilla
1 tsp. cinnamon
2 c. chopped apples

TOPPING: (opt.)
1/3 c. sugar
1/2 c. nuts
1 tsp. cinnamon

Mix ingredients well in large bowl. Pour into 13"x9" pan. Bake at 350 degrees for 20 minutes. Add topping and bake 15 to 20 minutes longer. Done when inserted knife comes out dry. Serve plain or with Cool Whip. Serves 12.
