JALAPENO CORN BREAD WESTERN
STYLE
 
1 1/2 c. cornmeal
1 c. sifted flour
3 tbsp. baking powder
1 tsp. salt
1 (7 oz.) can whole kernel corn, drained
2 eggs
1 can hot peppers, chopped
1 c. milk
3/4 shredded process American cheese

Sift dry ingredients together into bowl. Stir in Wesson oil, corn, peppers, eggs, milk and 1/2 cup cheese until blended. Pour into greased 9 inch iron skillet or 9 x 9 x 2 inch baking pan. Sprinkle top with remaining 1/4 cup of cheese. Bake at 375 degrees for 45 minutes. Hint: Put iron skillet in oven to get hot and then grease. Good with or without "hot peppers."
