SWISS CORN BAKE 
3 c. corn (fresh cut from cob or white shoe peg canned or frozen)
1 (6 oz.) can of evaporated milk
1 beaten egg
2 tbsp. finely chopped onion
1/2 tsp. salt
Dash of pepper
4 oz. Swiss cheese (shredded - 1 cup)
1/2 c. soft bread crumbs
1 tbsp. butter (melted)

Cook corn in 1 cup boiling salted water for 2 or 3 minutes or until just tender - drain well. Combine corn, milk, egg, onions, salt and pepper and 3/4 cup of the cheese. Turn in 10 x 6 x 1 1/2 inch baking dish. Toss the bread crumbs, melted butter and remaining 1/4 cup of cheese together.

Sprinkle over corn mixture - bake in 350 degree oven for 25 to 30 minutes. Garnish with green pepper rings if desired. Serves 6.
