APPLE & APRICOT CRISP 
1/3 c. finely chopped dried apricots
2 tbsp. brandy
1/4 c. flour
3 tbsp. brown sugar
1/8 tsp. salt
3 tbsp. cold, unsalted butter, cut into bits
1/3 c. rolled oats
2 tbsp. sliced almonds
2 Golden Delicious apples, peeled, quartered, cored & sliced thin crosswise

In small bowl let the apricots soak in the brandy for 5 minutes. In bowl blend the flour, brown sugar, salt and butter until the mixture resembles coarse meal, add the oats and the almonds, toss until well combined.

In a 9" (4 cup) glass pie plate, toss together the apples and apricot and brandy mixture, sprinkle the oat mixture over the top and bake the crisp in a preheated 400 degree oven for 25 minutes. Serves 2 generously.
