BAKED CHICKEN CASSEROLE JACOBA 
2 c. cooked chicken, cut into bite size pieces
1 c. diced celery
1 c. cooked rice
3/4 c. mayonnaise (light works fine)
10 oz. cream of chicken soup
2 tbsp. chopped onion
3/4 c. sliced water chestnuts
1/2 c. sliced mushrooms

TOPPING:

1/4 c. melted butter
1 c. crushed corn flakes

Mix all ingredients except topping and pour into a casserole which has been sprayed with PAM. Spread the topping over all. Bake in 350 degree oven for 45 minutes. Serves 4. Can be doubled or tripled.
