GREEN PEA SALAD 
6 tbsp. mayonnaise
Juice of 1 lemon
1/4 c. minced onion
2 c. frozen green peas, do not thaw
1/2 c. grated Cheddar cheese
Salt and pepper to taste
2 c. lettuce, torn into sm. pieces
8 slices crisp bacon, crumbled

Mix the mayonnaise, lemon juice, minced onion, frozen peas, and cheese in a bowl at least 24 hours before serving. Stir well. Add salt and pepper; cover and refrigerate. Before serving, add lettuce and bacon and toss well. Serves 6.

Note: This salad must be prepared 24 hours before serving. Great with grilled steaks.
