TOASTED OATMEAL COOKIES 
3/4 c. butter
2 1/2 c. rolled instant oats
1/2 c. all-purpose flour
1 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. baking soda
1 c. brown sugar
1 egg
1 tsp. vanilla extract
1/2 c. raisins

Preheat oven to 375 degrees. Melt butter and saute oats until browned, not scorched. Remove from heat. Sift flour with cinnamon, salt and soda.

In larger bowl, combine sugar, egg and vanilla. Beat until light. Stir in oats, flour mixture and raisins. Drop rounded teaspoons about 3 inches apart on ungreased baking sheet. Bake at 375 degrees for 10-12 minutes or until golden brown.
