IRISH SODA BREAD | |
4-5 c. organic unbleached flour 1 tsp. baking soda 1 tsp. cream of tartar 1 tsp. salt 3/4 c. sugar 1/2 c. butter, melted 3 oz. organic raisins or currants 1 3/4 c. buttermilk 2 tbsp. caraway seeds (optional) Place dry ingredients in a large bowl. Add butter, raisins, buttermilk and seeds (optional). Mix well, making a soft, moist dough. Dust with additional flour if dough is too sticky to handle. Turn out onto a floured surface. Knead 3-4 minutes, then shape into 2 round loaves. Moisten top of loaves with buttermilk, dust with flour, then score the top of each with an X. Bake on a buttered sheet pan until browned, about 1 hour. Cool on wire rack. 2 loaves. |
