BUTTERMILK DRESSING 
2/3 c. low-fat buttermilk
2 tsp. Dijon mustard
3 tbsp. grated cucumber (peel optional)
1 tbsp. chopped parsley
1 tbsp. finely minced onion to taste
Fresh ground or regular black pepper to taste

Mix or shake together all the ingredients and serve over salads, tomatoes or potatoes. Makes 6 servings.
