YAM CASSEROLE DELIGHT 
3 c. cooked mashed yams
1/2 c. sugar
2 eggs
1/2 c. milk
1/4 c. butter
3 tsp. vanilla
1/2 tsp. salt

Mix all ingredients well. Pour into well greased baking dish 10 x 2 inches deep. Sprinkle with topping and bake at 350 degrees for 30 minutes or until brown.

TOPPING:

1/2 stick butter
1/2 c. self rising flour
1/2 c. sugar
1 c. chopped pecans

Melt butter, stir in sugar and flour, then nuts. Mix until crumbly. Sprinkle on top of yams.

This can be made several days in advance, refrigerated, and baked at the last minute.
