YAM CASSEROLE 
8 med. to lg. cooked and peeled yams
1/2 c. milk
1 tsp. salt
Dash of pepper
1/2 c. soft butter
3/4 c. dark brown sugar
1/3 c. chopped pecans

Mash yams with salt and pepper and milk. Spread butter over bottom and sides of casserole or ring mold. Blend remaining butter with yams. Spread sugar over bottom and sides of casserole and press. Sprinkle nuts over bottom. Put yams over all. Bake at 350 degrees for 15 minutes uncovered, then cover with foil and bake 10 minutes longer. If baked in ring, center could be filled with creamed ham, chipped beef or chicken.
