SHADES MOUNTAIN SCHOOL'S INSTANT
YEAST ROLLS
 
5 lb. bread flour
1 c. sugar
1 c. dry milk powder
1/4 c. salt
1/2 c. instant yeast
1 1/2 qt. warm water
3/4 lb. oil, shortening, or butter

Melt butter or shortening. Put oil, butter, or shortening in mixing bowl; add very warm water.

Mix all dry ingredients. Put in mixer. Mix as usual with dough hook until dough leaves bowl. Form balls and let rest a few minutes. Roll out; cut and put in baking sheet that has been greased. Brush with butter. Let rise away from draft until double in size. Cook at 400 degrees until golden brown then brush with butter. Makes 100-150 rolls.
