PORK CHOP SCALLOP 
4 pork chops (1/2 inch thick)
4 potatoes, pared and thinly sliced
1 lg. onion, sliced
2 tbsp. flour
Salt and pepper to taste
1 1/2 c. milk
Paprika

Trim fat from chops; render in skillet, then brown chops on both sides in hot fat. Set aside. Grease 1 2 quart baking dish or casserole. Layer half the potato slices, onion slices, flour and seasonings. Top with remaining potatoes; season. Place browned chops on top, season lightly with salt and pepper, generously with paprika. Cover and bake at 350 degrees for 1 hour. or until chops and potatoes are tender. Brown lightly under broiler.
