PORK AND YAM BAKE 
2 to 3 lbs. smoked pork shoulder roll
2 (17 oz.) cans Royal Prince yams, drained
1/4 c. brown sugar, packed
1 tsp. cinnamon
3 tbsp. butter
1/4 c. orange juice
1 c. miniature marshmallows
Pam vegetable cooking spray

Cut pork shoulder; roll into 1/2 inch slices. Place slices, overlapping, in a 12 x 7 1/2 inch baking dish, sprayed with Pam. Bake, uncovered, in a 325 degree oven for 1 hour. Place yams around meat. Combine brown sugar and cinnamon; sprinkle over yams. Dot with butter; add orange juice. Bake 15 minutes. Place marshmallows over yams; continue baking 15 minutes.
