POPPY SEED CHICKEN 
6-8 chicken breasts, boiled & cut in bite size pieces
1 sm. carton sour cream
2 cans cream of chicken soup
1 tsp. poppy seeds
1 stack Ritz crackers, crushed
1 1/2 sticks butter, melted
1 1/2 c. cashews

Place chicken pieces in 7"x11" Pyrex cooking dish. Mix soup with sour cream and pour over chicken. Top with crushed crackers followed by poppy seeds. Pour melted butter over top. Cover with cashew nuts and bake at 350 degrees for 30 to 40 minutes. Serves 6 to 8.
