CARROTS WITH BACON 
4 strips bacon, cut into 1/2 inch slices
2 tbsp. butter
8 carrots, cut in half lengthwise
4 green onions, finely chopped
1/2 tsp. salt
1/4 tsp. pepper

In breakfast skillet fry bacon slices until crisp over medium low heat. Drain bacon on paper toweling and remove drippings.

Melt butter in skillet over medium-low heat. Add carrots, onions, salt and pepper. Increase heat to medium and cover. When cover is hot to touch, reduce heat to low. Cook for 20 to 25 minutes. Add bacon just before serving. Makes 4 servings.
