JACKIE'S BERRY YUMMY SPINACH SMOOTHIE | |
At about 300 calories per serving this is not recommended as a snack, it's meant more as a breakfast smoothie! 1 cup 100% fruit juice 2 cups fresh spinach 6 tbsp. ground flax seed meal 1 cup chopped carrots 1 cup raspberries 1 cup blueberries 1 cup blackberries 1 whole mango (remove skin and stone) 1 cup low-fat vanilla or plain yogurt In a standard sized (must hold at least 6 cups) blender add juice, spinach and flax meal and blend until liquefied. Then add the carrots and blend. Next add 3 cups of berries and blend, then the mango and blend, then the yogurt and blend, and you're all done! It makes about 6 cups when all is said and done and it's a pretty purple color :) It's recommended that the average adult have 2 tablespoons of flax seed meal daily* so this recipe is designed to be 3 servings. Variation: To lower the calorie content to have a healthy snack eliminate the flax seed meal and cut the yogurt in half, or omit it all together. Note: Flax seed meal is very high in fiber so if you don't regularly eat a lot of fiber try starting with 1 tablespoon daily until your body is adjusted. Makes 3 servings. Submitted by: Jackie G. |
