CHEESE-BROCCOLI SOUP | |
2 pkgs. chopped frozen broccoli 1/2 c. chopped onion 1 c. chopped celery 1 (13 3/4 oz.) can chicken broth Milk (as needed) approximately 1 c. Dash of paprika Salt and pepper to taste 1 c. shredded Cheddar cheese 1. In a medium saucepan combine broccoli, onion and celery and broth - heat to boiling. Reduce heat, cover and simmer for 15 minutes or until vegetables are tender. 2. Cool for 15 minutes and put through blender small amounts at a time until smooth. 3. Return to saucepan and add paprika, salt and pepper. Add milk until to desired consistency. Cook, stirring, until thickened and bubbly. Add cheese and stir until melted. 4. Serves 4 to 6. Goes good with garlic bread. |
