CHEESY BROCCOLI SOUP 
2 c. fresh broccoli pieces (or 1 (10 oz.) pkg. frozen)
1 medium onion, quartered
1 (14 1/2 oz.) can chicken broth
1/2 tsp. beau monde seasoning (if desired)
1 c. milk
2 tbsp. flour
Dash of pepper
1/4 c. process cheese spread (Cheese Whiz) or 1/2 c. grated Cheddar cheese

Combine broccoli, onion, half of broth, and the seasoning in 2 quart measure bowl. Cover with plastic wrap. Cook full power 8-9 minutes or until broccoli is tender. Let stand 5 minutes. Pour mixture into blender or food processor container. Cover and process at medium speed until smooth. Return to bowl. Combine milk and flour until smooth. Blend into hot vegetable mixture. Add pepper.

Cook full power, uncovered, 3-4 minutes or until mixture boils and thickens, stirring twice. Stir in cheese until well blended. Mix in remaining chicken broth. (Cover and refrigerate for cold soup or serve at once.)
