OZARK APPLE PUDDING 
3 tbsp. all purpose flour
1 1/4 tsp. baking powder
Dash of salt
1 egg
1/4 c. granulated sugar
1 tsp. vanilla
1/2 lb. apples, cored, pared, and chopped (about 5 apples)
1 oz. chopped pecans

Preheat oven to 350 degrees.

Sift flour together with baking powder and salt; set aside. Using a electric mixer, mix at high speed - egg and sugar until thick and lemon color. Add vanilla, gradually add flour mixture. Mix well. Stir in apples. Spray in 8 inch pie plate with non-stick spray. Spread apple mixture evenly in pie plate. Sprinkle nuts on top. Bake 20-25 minutes until toothpick comes out clean. Can top with Cool Whip.
