ZUCCHINI CAKE 
3 eggs
1 c. salad oil
2 1/2 c. sugar
2 c. raw unpeeled zucchini, cut in chunks and thrown in blender
2 tsp. cinnamon
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
3 tsp. vanilla
3 c. flour
1 c. chopped walnuts

Beat eggs until foamy. Gradually beat in oil and sugar; add shredded zucchini, cinnamon, salt, baking powder, baking soda and vanilla. Mix well. Gradually blend in flour, fold in walnuts. Pour in greased and floured bread pans (2) and bake at 350 degrees for 1 hour 20 minutes or until done. Cool in pans 10 minutes. Loosen edges, shake loose and place on rack to cool. It usually never takes an hour to bake but everybody's oven is different. Keep an eye on it.
