3 to 4 potatoes, cut in slices, put into a serving bowl 2 tomatoes, sliced the same way and put into another bowl 2 onions, sliced as above and put into 3rd bowl Olive oil In baking dish, put in some olive oil and one layer of onions, one layer of potatoes, one layer of tomatoes. Then put some olive oil on top. Then continue with a second layer of each adding olive oil. A little salt and pepper can be used after each layer. Cook for at least 1 to 1 1/2 hours until finished. Potatoes usually take longer. Baste now and then with the juice. |
