SCOTTISH SHORTBREAD 
1 c. butter, softened
2 c. flour
1/2 c. sugar

Mix all ingredients together until well blended. Pat evenly into ungreased 9 x 13 pan. Prick all over with a fork.

Bake in a pre-heated 300°F oven for 35-45 minutes or until golden brown.

Cut immediately into squares or bars. Sprinkle with granulated sugar. Cool. Store in an air-tight container.

Cooks Note: At christmas, I sometimes tint the dough with red or green food coloring and sprinkle with the red and green colored sugar crystals.
