ZUCCHINI CUPCAKES 
3 eggs
3/4 c. oil
3 tsp. vanilla
2 c. sugar
2 c. shredded unpeeled zucchini
2 tsp. baking soda
1/2 tsp. baking powder
1 tsp. cinnamon
2 c. flour
1 tsp. salt (opt.)
1/2 c. chopped nuts
1/4 c. crushed pineapple

Combine eggs, oil, vanilla and sugar. Beat for 2 minutes, then add zucchini. Beat in the flour, baking soda, baking powder, cinnamon and salt. Stir in nuts and pineapple. This recipe can be made in a 13"x9" ungreased pan or pour batter into paper lined cupcakes. Bake at 350 degrees for 1 hour for cake, 30 minutes for cupcakes. Sprinkle chocolate chips on if desired.
