BURGERS WITH MUSHROOM SAUCE 
10 lbs. ground turkey
8 lg. eggs, beaten
1 c. soy sauce
1 1/2 c. milk
2 tbsp. salt
1 1/2 qts. mushroom cream sauce
3 tbsp. chicken or turkey stock base
11 oz. soft bread crumbs
2 c. minced onions
1 tbsp. pepper

Combine all ingredients well. Shape into oval patties, using 7 ounces for each serving. Arrange on shallow greased baking pans. Bake at 425 degrees for 25-30 minutes. Serve with 1 ounce mushroom cream sauce.

MUSHROOM CREAM SAUCE:

Saute 1 quart sliced mushrooms and 1 cup chopped onion in 5 ounces butter. Blend in 3/4 cup flour; cook one minute. Stir in 1 1/2 quarts milk, 3 tablespoons chicken or turkey stock base, 2 teaspoon salt and 1 teaspoon dry mustard. Cook, stirring until sauce boils thoroughly. Makes 1 1/2 quarts sauce.
