OATMEAL PANCAKES 
2 eggs
1 1/2 c. buttermilk
1 1/2 c. oatmeal
1 tsp. baking soda
1 tsp. baking powder
1 tsp. sugar
1/2 c. flour
1/2 tsp. salt
1 tbsp. cooking oil

Beat eggs and add to buttermilk. Mix with the combined dry ingredients. Refrigerate overnight. Can be stored in refrigerator for 3 days. Cook on hot griddle.
