APPLE CINNAMON OATMEAL COOKIES 
2 cups pancake flour
2 eggs
1 cup sugar
pinch of ground ginger
1/2 cup water (or more as needed)
2 1/2 cups quick oats
1 cup diced apples
3/4 cups soft butter
1 tablespoon (or to taste) cinnamon

Preheat oven to 350°F.

Mix all ingredients well until it forms a soft dough. Drop spoonfulls onto tin foil-lined baking sheet.

Bake for 12-15 minutes at 350°F or until the edges are brown and crisp (but not burnt). Remove from hot pan and place on cooling rack for at least 5 minutes. Store in a plastic container or bag.

Great recipe, easy to prepare. Didn't quite brown the way I expected -- ended up with very nice crisp bottoms and very stark unfinished looking tops. Not sure if that's a user error or if there's a fix for it, but at any rate they taste absolutely delicious! I skipped the ginger because I didn't happen to have any on hand when I made these and they're still wonderful.
