CRANBERRY APPLE PIE | |
1/4 cup sugar 1/4 brown sugar 1/2 tsp. cinnamon 2 c cranberries, halved 1 (9-in.) pie crust 1 tbsp. cornstarch 1/2 tsp. lemon rind 1 tsp. sliced apples 4 Lorna Doone Cookies Mix sugar, spices, lemon rind, and cornstarch. Add cranberries, apples and lemon juice; toss until well coated. Crumble cookies in bottom of pie shell. Add cranberry mixture. Sprinkle with topping. Topping: 3/4 c flour 1/2 c brown sugar 1/2 c butter, softened 1/2 tsp. cinnamon 1/2 c chopped walnuts 1/4 c oatmeal Cut together with pastry knife until butter is size of peas. Sprinkle over mounded fruit. Bake at 400°F for 50 minutes. Cover with foil the last 10 minutes, if browning too quickly. |
