APPLE OATMEAL COOKIES 
1/2 c. butter, softened
1/2 c. honey
1 egg
1 tsp. vanilla
3/4 c. flour, unsifted
1/2 tsp. baking soda
3/4 tsp. cinnamon
1 med. apple, finely chopped
1 1/2 c. oatmeal

Beat butter, honey, egg and vanilla together. Mix flour, baking soda and cinnamon together. Add egg to mixture. Add apple. Mix well. Stir in oatmeal. Drop by spoonfuls on greased cookie sheet and bake at 375°F for 10 minutes.

These cookies were good, but I added 1/4 cup brown sugar to the recipe, and also added a tad bit more cinnamon.

I used this recipe with my 4th gr. class. It was easy for them to follow the directions. I liked it because it has healthy ingredients. Everyone especially loved the taste: soft, chewy, not too sweet, and "yummy".

This was an easy recipe to follow. I doubled it. I'm glad I did because in total I only got 32 cookies out of it (16 cookies per recipe). I cook for large crowds and would have appreciated knowing how many cookies to expect to get out of it. I think it could have handled double the amount of apples (maybe 1/2 shredded & 1/2 chopped) to get more apple flavor. DEFINITELY did not need additional sweetening. With adjustments, I would make it again.
