OATMEAL PANCAKES 
2 c. milk
1 1/2 c. quick oatmeal
1 c. sifted all purpose flour
2 1/2 tsp. baking powder
1 tsp. salt
2 tbsp. sugar
2 eggs, beaten
1/3 c. vegetable oil

Pour milk over oats, let stand. Sift together dry ingredients. Stir eggs into oats, milk mixture. Add sifted dry ingredients. Stir in vegetable oil. Bake on hot lightly greased griddle or fry pan until golden brown, Turning only once. Serve hot with syrup, jam, jelly, or preserves.
