CHEESE AND WINE QUICHE 
1 (9 inch) unbaked pastry shell
1 tbsp. freeze-dried chives
4 strips bacon, cooked until crisp, broken into bits
1 to 1 1/2 c. grated Swiss or Cheddar cheese
3 eggs, beaten
1 1/3 c. light cream
1/3 c. California Chablis, or other white table wine
1/2 tsp. salt
Dash of nutmeg
Dash of white pepper

Place pastry shell in 425 degree oven and partially bake, about 6 to 8 minutes. Remove from oven and cool until ready to use. Sprinkle chives, bacon bits and grated cheese over bottom of pastry shell.

Combine remainder of ingredients and pour carefully into pastry. Bake on lowest shelf of 400 degree oven for 30 minutes or until set in center. Allow to stand in warm place for about 10 minutes before cutting. Makes 5 to 6 servings.

VARIATIONS:

Instead of cheese and bacon, substitute the following ingredients:

1 c. crab meat or shrimp
Cut up bits of ham
Mushrooms
Black olives
Cook, chopped spinach or asparagus

Mix in as instructed above.
