3 c. zucchini
4 eggs
1 c. Bisquick
1/4 c. grated cheese
1 sm. onion, chopped
4 oz. Mozzarella, diced
1/4 tsp. salt
1/4 tsp. pepper
1/4 tsp. parsley
1/2 c. oil

Beat eggs, mix all ingredients together. Bake in a greased pie pan for 40 to 45 minutes, oven temperature, 350 degrees.
