OATMEAL SCOTCHIES 
1 1/4 c. flour
1 tsp. baking soda
1/4 tsp. salt
1/2 tsp. cinnamon
1 c. soft butter
5/8 c. sugar
5/8 c. packed brown sugar
1 egg white & 1 whole egg or 2 whole eggs
1 tsp. vanilla
3 c. oatmeal
2 c. butterscotch chips

Cream butter and sugar. Add eggs and vanilla and mix well. Add flour, soda, salt, cinnamon and mix. Stir in oats and chips. Bake at 350 degrees for 10 minutes. Let set on cookie sheet for a minute or two, then remove.
