OATMEAL SCOTCHIES 
1 1/4 c. all purpose flour
1 tbsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1 c. butter, softened
3/4 c. granulated sugar
3/4 c. brown sugar
2 eggs
1 tsp. vanilla
3 c. quick or old fashioned oats
1 (12 oz.) pkg. butterscotch pieces

Preheat oven to 375 degrees. Combine flour, salt, cinnamon and baking soda. Set aside. Beat sugars, butter, eggs and vanilla with electric mixer until creamy; gradually add flour mixture. stir in oats and butterscotch pieces. Drop by rounded teaspoons on ungreased cookie sheet. Bake for 7-8 minutes for chewy cookies and 10-12 for cake-like cookies.
