CHEESECAKE 
1 1/4 c. graham cracker crumbs
2 tbsp. sugar
1/4 c. butter, melted
2 pkgs. (8 oz.) cream cheese, softened
2 eggs
3/4 c. sugar
2 tsp. vanilla
8 oz. sour cream
2 tbsp. sugar
2 tsp. vanilla

Heat oven to 350 degrees. Mix cracker crumbs and 2 tablespoons sugar; stir in butter. Press in ungreased spring form pan. Beat cream cheese slightly, add eggs, 3/4 cup sugar and 2 teaspoons vanilla; beat until light and fluffy. Pour over crumb mixture. Bake until firm, about 25 minutes. Mix sour cream, 2 tablespoons sugar and 2 teaspoons vanilla, spread carefully over warm cheesecake. Cool. Refrigerate at least 3 hours. Before serving drizzle warm melted chocolate over cheese cake and top with fresh strawberries dipped in chocolate or fresh sliced strawberries.
