SALMON PATTIES 
2 c. flaked salmon and liquid from canned salmon
1 c. soft bread crumbs or 1 c. finely crushed crackers
1 beaten egg
1/2 tsp. salt
Dash of pepper
1 tsp. minced onion

Combine salmon with salmon liquid. Add all other ingredients and mix thoroughly. Pan fry in butter or bacon fat until nicely browned. Serve at once.

Good also served on a hamburger bun, garnished with a slice of tomato and strip of bacon, as a salmonburger. Serves 8. Double for 1 quart jar.
